To celebrate this amazing holiday, I thought I’d share a couple of recipes that look fabulous…
Orange Cream Floats
2 pints (4 cups) vanilla ice cream, softened
1 (6 0z.) can frozen orange juice concentrate, thawed
3/4 cup water
1/2 tsp. vanilla
Red and yellow food coloring, if desired
1 (2 liter) bottle ginger ale
In a large bowl, mix ice cream, orange juice concentrate, water, vanilla, and food coloring until almost smooth.
For each serving, scoop a heaping 1/2 cup of ice cream mixture into a 16-oz. glass. Pour about 1 cup of ginger ale over the top.
6 large baking potatoes
1/4 cup olive oil
1-1/2 tablespoons paprika
8 slices bacon, cooked and crumbled
2 cups shredded Cheddar cheese
1 cup chopped black olives
1 cup chopped green onions
1 cup ketchup or salsa
1 cup sour cream
Chopped fresh parsley (optional)
Pierce potatoes in several places with a fork. Microwave on high 2 minutes per potato. Let cool 5 minutes.
Slice each potato in half lengthwise. Heat olive oil in a skillet over medium heat. Add potato halves and cook until tender and lightly browned. Remove from heat. Cut each potato half in half lengthwise again to form 2 smaller tombstones, if desired.
Arrange bacon, cheese, olives and onion in rows in a 9×13-inch casserole pan to resemble paths through the graveyard. Place several potato tombstones upright randomly throughout the dish. (Decorate if desired.) Spoon ketchup or salsa at the base of each potato. Using a pastry bag or disposable plastic bag with a corner removed, pipe sour cream in ghost shapes throughout the dish. If desired, sprinkle chopped parsley throughout the dish as grass. Serve remaining potatoes in a separate dish.
